Easy One-Pot Chicken Dinner

Ingredients:
  • 6-8 chicken thighs (bone-in, skin-on for extra flavor)
  • 2 1/2 tsp avocado oil/ olive oil
  • 1/2 onion, diced
  • Fresh parsley
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 ½ tsp Salt
  • ½  tsp Black pepper
  • 2 cups rice 
Instructions:

 Season chicken thighs generously with salt, pepper, Italian season, garlic powder and cajun season. Set it aside  to marinate for 2-3 hours or overnight.

Next start to prep your onion, chop parsley and wash your rice.

Heat avocado oil in a large skillet or Dutch oven over medium-high heat. Then add chicken to the hot pan, skin side down. Cook for 3-5 minutes until golden brown, then flip and cook for an additional 5 minutes. Transfer the chicken to a plate and set aside.

In the same skillet, add diced onion or any veggies you prefer. Sauté for 3-4 minutes until softened, then add fresh parsley and cook for another minute until fragrant.

Next add your rice, sauté for 3-4 minutes, then add your chicken broth. Return the chicken thighs to the skillet, nestling them amongst the rice, give everything a gentle stir to combine.

Reduce the heat to medium-low, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.

Once the chicken is fully cooked, garnish with fresh herbs like parsley, chives, green onion or basil for a burst of freshness.
