Ingredients:

1 ½-2 lbs Chicken (preferably bone-in for enhanced flavor)
2 tbsp Jamaican curry powder
Garlic cloves
Scotch bonnet pepper (for a hint of heat)
½ Onion
Thyme
4 Scallions
3 Potatoes
1 Carrot
1 Bouillon
Ginger
Avocado oil
3 Bay Leaves
Pimento
1 tsp Salt and ½ tsp black pepper

Step-by-Step Preparation:

Marinate the chicken: Begin by marinating the chicken pieces with Jamaican curry powder, garlic, diced onions, thyme, bay leaves, scallions, bouillon, salt, pepper, ginger, and Scotch bonnet pepper. Allow the chicken to marinate for at least 1 hour to absorb the flavors fully.

Browning the curry powder and chicken: Heat oil and butter in a large skillet or Dutch oven over medium heat. Add the 1 ½ tsp powder to the pot, mix well, and cook for 5 mins. Next, add the marinated chicken pieces and sear them until golden brown on all sides, locking in the savory goodness.

Infusing the flavors: Once the chicken is seared, add 1 1/2 – 2 cup of water to the skillet, stir the ingredients gently to combine.

Simmer: Cover the pot and let your chicken cook for 20 mins, this will allow the flavors to meld together. After that add your potatoes.

Let it simmer: At this time, give your gravy or sauce a taste, if you need more flavor add ½ or 1 bouillon to your gravy, then mix. Reduce the heat to low and let the curry chicken simmer for approximately 15-25 minutes, or until the chicken is tender and succulent.
Serve and savor: Once cooked, serve the Jamaican curry chicken hot over a bed of fluffy white rice, Jamaican rice and peas, roti or nan.
