Brown Stew Chicken:

Brown Stew chicken, a recipe brimming with rich flavors and cultural heritage, is a must-try for anyone looking to spice up their recipe book. This delectable dish features tender chicken pieces simmered in a fragrant blend of herbs, spices, and vegetables. 

For Marinating the Chicken:
  • 2 lbs chicken (cut into pieces)
  • 2 tbsp avocado oil
  • 2 tbsp soy sauce
  • 2 tbsp Grace browning sauce
  • fresh thyme 
  • 3 garlic cloves, minced
  • 1/2 onion, sliced
  • 3 scallions, chopped
  • 1 scotch bonnet pepper (optional, for extra heat)
  • 1 tsp pimento
  • 1 tsp Salt and  black pepper 
  • 1 tsp Garlic Powder
  • 1 tsp Onion
  • 1 tsp Paprika
  • 2 tomatoes (chopped)
  • Sweet pepper (optional)
  • 2 Cups  water
  • 2 tbsp ketchup
  • 2 tsp brown sugar

Step-by-Step Instructions
1. Marinate the Chicken

 In a large bowl, combine the chicken pieces with soy sauce, browning sauce, avocado oil, thyme, garlic, onion, scallions, scotch bonnet pepper, tomatoes, garlic & onion powder, pimento, salt, and pepper. Mix well, ensuring all the chicken pieces are coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

2. Brown the Chicken

In a large, heavy-bottomed pot or Dutch oven, heat the avocado oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later use) and brown the pieces on all sides. This step is crucial for developing a deep, rich flavor. Once browned, remove the chicken from the pot, add brown sugar, sauté for about 2-3 minutes. This helps to build the base of your stew chicken gravy.

4. Add Tomatoes and Reserved Marinade

Add your veggies to the pot along with the reserved marinade. Stir well, scraping up any browned bits from the bottom of the pot. This will enhance the depth of the stew’s flavor.

5. Simmer the Stew

Return the browned chicken to the pot. Pour in 2-2 ½ cups of water, ensuring the chicken and vegetables are just covered, then stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the stew simmer for about 30 minutes, always remember to taste your food to see if your flavors are coming together. Add ketchup, now let your brown stew chicken simmer for 10-15 minutes or until the chicken is tender. Stir occasionally to prevent sticking and ensure even cooking.

6. Adjust Seasonings and Serve

Taste the stew and adjust the seasonings with ½ chicken bouillon if needed.
