Ingredients:

1 1/4 cup of flour

2 tbsp cane sugar

3/4 tsp baking powder

3/4 tsp baking Soda

1/4 tsp salt

1 large egg

1 1/2 cup buttermilk

1/4 cup butter, melted

2 tsp vanilla extract

Prep Batter

In a large mixing bowl, whisk together the dry ingredients, until well combined. In a separate bowl,  the eggs and then add it to the buttermilk, melted butter, and vanilla extract. Whisk the wet ingredients until they are fully incorporated.

Combine Dry and Wet Ingredients

Create a well in the center of the dry ingredient mixture and pour the wet ingredients into it. Gently fold mixture with a spatula or wooden spoon until the dry and wet ingredients are just combined. Be careful not to overmix; a few lumps are perfectly fine. Overmixing can result in tough pancakes.

Rest the Batter

Allow the batter to rest for about 10-15 minutes. This resting time allows the gluten in the mix to relax, resulting in lighter and fluffier pancakes.

Preheat and Grease the griddle
